Maillard?

The Maillard reaction (it’s French, pronounced ‘mah-yar’) is, according to Wikipedia, "a form of nonenzymatic browning similar to carmelization. It results from a chemical reaction between an amino acid and a reducing sugar, usually requiring heat."
